I recently visited Willim and was quite disappointed with their service.

After ordering a Long Mac, the barista asked "how much would you like?" asking me to indicate how much I wanted in my cup. I've never been subjected to this before and was quite set back.

A 15 minute wait for my takeaway coffee then ensued. I then got to my car to realize that they had stuffed up the order and given me a Long Black instead.

The coffee itself was good tho!
My advice is to avoid the place when it is busy :)

Single-handedly have you guys to thank for introducing me to coffee. Originally I had never been into coffee after being put off it from fast-food places and dodgy service stations. After coming across your blog I've been introduced to some quality cafes and a culture i'd never through existed. :)

Thanks so much :)

I'm there when ever I can, but I'm there for the staff more than the coffee, is it the way they roast, maybe catering to there target market. Little bit sour. Maybe it's the extraction. Or maybe it's just me. Still love it and won't stop going there.

This is a place that takes is coffee seriously but not in a snooty kinda way … the staff there is chilled out and friendly and the food is great quality and being barista myself (aka a very fussy coffee drinker) I can safely say they are one of the best in Melbourne !! if you haven’t been there your missing out on some really good coffee and Cajun chicken sandwiches !

Thanks for that John. I agree on the love/hate thing. People will either appreciate this kind of thing or not and be responsive to it or not. It is great to be able to experience across Melbourne the varying styles, regions and brewing methods offered. And some of the little guys like Willim you mentioned in your other comment doing good things too. SimonL

Gerrick and his small team are doing a really good job in what is otherwise a quality coffee starved area.

He's still offering the odd single origin along with, from memory, now three different blends whilst he's also started using the Clever Coffee Dripper to great effect (I had a Yirg through it last weekend which was superb).

Slowly but surely the local clientele are becoming more coffee savvy so hopefully the single origin offering are more appreciated in future.

Nice review, boys.

There seems to be a bit of a love/hate thing going on with Sensory Lab but i fall firmly on the 'love' side.

A few weeks back i had the best latte i've ever had there (S1, i believe), whilst then Kenyan pourover i had was also pretty special.

Keep up the good work, lads.

Hey David

Your spot on about explaining grind size. Gimme coffee is a good website where it has pictures of grind next to coin in comparison. Our grind size is on par with yours (3.5 for classic pour over, 4 for CCD and 4.5 press).
As far as TDS we aim for 1.30-1.40%. The brew I have described above had a 1.30 with 20.07 extraction.
This is what is great about coffee. Everyone has different methods and procedures to produce the final cup. It is all personal preference and making it to your taste.
